Ingredients
Olive Oil 1 Tbsp
Carrot (Diced) ½ Cup
Yellow Onion (Diced)½ Cup
Celery (Diced) ¼ Cup
Tomato Paste 1 Tbsp
Zinfandel Wine 1 ½ Cup
Beef Broth 1 Qt
Bay Leaf 1 Stem
Parsley, Thyme & Oregano Stems 1 each
Garlic peeled whole 1 clove
Salt to taste (app. 1 tsp)
Red Flake Pepper (ground) to taste (app. 2 tsp)
Flour (if needed for sauce) ¼ cup or less
80% lean Angus chopped beef 3 lbs.
Bread crumbs 1 ½ cups
Sweet Onion (ex. Vidalia) (Diced) 1 Large
Plum Tomatoes (fine diced)6
Garlic (Fine diced)2 Tbsp
Worcestershire Sauce see instructions app 4 Tbls
Baby Spinach Leaves 36 Leaves
Sharp cheese (ex. provolone, cheddar) 6 Slices
Sharp Graded Cheese

Preparation
Heat oil in a large stockpot over med-high heat. Add carrots & onions and sauté until onions are golden brown, 10-12 min. Add celery & sauté celery is tender, app. 8 min.
Add tomato paste & mix until mixture is a rust color app. 3 min
Add wine to deglaze the pot. Simmer until the mixture is reduce in half.
Add broth, & all herbs and whole clove or garlic and simmer until sauce is thick enough to coat a spoon. Gently add flour if necessary for coating.
Strain sauce to remove all hard items & keep warm
Combine the sweet onion, dices garlic and diced plum tomatoes in a bowl Heat this mixture over a med to high flame until the tomatoes loose some moisture. Quickly remove & place back in bowl. Use some paper towels to “pat” the mixture to remove some more moisture.
In a large bowl, combine the hamburger meat with the tomato & onion mixture and bread crumbs. Make into 8oz. patties.
Put a few drops of Worcestershire on each side of the patties and place on a medium - high grill (app. 375 - 400 degrees)
Place 1 Tbsp of the zinfandel sauce on the “raw” side of the patties before you flip them which should be app. 5-7 min. After flipping, repeat the zinfandel sauce and place 4 leaves of the baby spinach on each burger. Top with the graded cheese thane put a please on cheese on top of that. When burgers are finished (and the cheese is melted) (app. 5-7 min) place 1 more leaf of baby spinach on top and serve on a hard Kaiser roll.
Add any condiments to taste (there is plenty of taste in this burger) Then, ENJOY!
