Ingredients

1lb ground turkey breast

1/4 lb turkey pastrami sliced thin

1 large red onion

2 garlic cloves chopped finely

8 oz baby bella mushrooms-medium chopped

1 mango

1 lime

1 avacado

1/4 cup chopped fresh cilantro(or parsley)

1 tbsp ground cumin

4 tbsp olive oil

1 cup shredded white sharp cheddar

4 tbsn mayonnaise

2 tbsp prepared wasabi

6 tbsp Tomato salsa of choice(Jarred or Homemade)

6 onion rolls

salt and pepper to taste

Preparation

Saute mushrooms, half of the garlic, and 1/2 tspn of salt,on medium heat until moisture is released. Place 1/3 of the mushrooms in a medium size bowl with ground turkey. Reserve the rest. ~Add 2 tbsp of oil to the same pan as you sauteed the mushrooms, add sliced onions, remaining garlic, 1/2 tspn of salt, 1/4 tspn pepper. Saute on medium, stirring frequently until caramelized and brown. Remove 1/3 of the onions and cool slightly, then chop them well. Add to the ground turkey, reserve the rest. ~Mash avacado, and add 1 tbsp minced cilantro, juice of half a lime, 1 tspn cumin, salt and pepper to taste. Reserve. ~Mash mango, add 2 tspn to a small bowl holding the mayonnaise, and wasabi. Mix well. Reserve. Place the rest of the mango in the bowl holding the turkey. ~Add 1/2 tspn of salt and pepper, and 1 tpsp of oil to turkey-mix well ~Make 6 patties and place on slightly oiled broiling pan, and place under the broiler turning half way until done( about 5 minute per side.) ~Prepare buns by slicing in half and brushing each half with a little oil or butter, and place oil side up on a sheet pan. ~When burgers are done, top them with the cheese, and remove them from the broiler(keeping them on the pan to keep warm), and place the buns under the broiler. ~When buns are toasted, place them on individual plates. ~Coat top and bottom half of each bun with the mayonnaise mix. ~Place a couple of slices of Pastrami on the bottom bun, and top with the burger. ~place mushrooms, then onions, then avacado, then salsa on top of each burger patty. Enjoy with lots of napkins!
