Ingredients

PUDDING

1 C sugar

1 egg

1 tbsp apricot jam

1 C flour

1 tsp baking soda

¼ tsp of salt

1 tbsp melted butter

1 tsp white vinegar

1 C milk

SAUCE

½ C of cream

3 oz butter

½ C brown sugar

¼ C water

Preparation

PUDDING Beat sugar and egg. Add the jam, then the flour, baking soda and salt. Mix well. Add butter, vinegar and milk. Mix well. Bake at 350 covered in a glass dish sprayed with PAM for 50 minutes. SAUCE While pudding is baking, make sauce. Bring all ingredients to a boil. Boil for 5 minutes and then pour over cooked pudding immediately when removed from the oven. Serve hot/ can reheat uncovered for 15 minutes. Freezes well.
