Ingredients

4 large ears leftover, or cooked & cooled corn on the cob

1/2 t. sesame oil

1 T. canola, or other neutral oil

1 t. rice vinegar

juice from 1/2 lime

1/2 t. salt

1/4 t. cayenne pepper

3 thinly sliced scallions

2 T. chopped cilantro

Preparation

Slice corn off cobs, mix all ingredients into corn. Allow to chill for at least two hours.
