Ingredients
4 cups of white meat chicken chunks
14 oz. tortilla chips crushed
2 large onions chopped
4 tblsp. butter
4 lightly beaten eggs
2 cups chive cottage cheese
1 tsp. salt
1/2 tsp. cumin
2 4 oz. cans chopped green chilis
3 cups shredded mexican cheese mix
2 cups shredded sharp cheddar
Preparation
Saute’ onions in butter until golden. Combine eggs, cottage cheese, salt, cumin and pepper in small bowl. Place 1/2 of tortilla chips in bottom of a shallow 4 qt. buttered casserole. Layer 1/2 of the chicken,1/2 of the egg mix, 1/2 of chilis, the mixed cheese and repeat topping with cheddar. Cover with foil and bake at 350* 40 minutes.
