Ingredients

2-3 lb roast

1 lb dry pinto beans

16 oz jar salsa

Taco Seasoning

Tortillas

Cheese

Lettuce

Preparation

In large crockpot, place roast. Add beans, salsa, and 2 cups water. Cook for 8 hours on low, then shred meat and mash beans in crockpot. Add 1 pkg taco seasoning and any additional seasoning (green chillies, salsa, rotel, tomatoes, etc) and finish cooking another hour. Check to make sure that it is not too dry, then add more water.

Serve with flour tortillas, cheese, lettuce or makes a great dip for large Fritos.
