Ingredients
4 large navel oranges
1 large red grapefruit
3 Cups cubed peeled jicama
3/4 cup slivered radishes
1& 1/2 tsps grated lime rind
3 TBLS fresh lime juice
3 TBLS plain FF yougurt
2 TBLS light mayo
1& 1/2 TBLS honey
1/4 tsp black pepper
dash salt
4 Cups romaine
1 Cup pomegranate seeds
3 TBLS pepitas(raw pumpkin seeds), toasted
2 TBLS chopped fresh cilantro
Preparation
Peel and section oranges and grapefruit over a large bowl; reserving juice;add sections to juice. Add jicama and radishes. Toss gently. Cover and chill 30 minutes Combine rind and next 6 ingredients in bowl-stir well. Put lettuce in bowl. Using slotted spoon, place orange mixture over lettuce. Drizzle with yougurt mixture. Sprinkle with pomegranate seeds, pumpkin seeds and cilantro
