1 pound halibut or orange roughy

1/4 cup tequila

2 tablespoons lime juice

1 fresh jalapeno finely chopped

1/4 tsp ground cumin

2 garlic cloves minced

8 8-inch flour tortillas

1 1/2 cups shredded lettuce

1 cup sliced red pepper

1 medium red onion thinly sliced

snipped fresh cilantro

Preparation

in a small bowl stir tequila, line juice, jalapeno, cumin and garlic. Marinate fish in a shallow dish with marinate on top refridgerated for 30 mins. Preheat oven to 350. Wrap tortillas in foil and heat 10 mins. Preheat Broiler. Grease baking pan and broil fish 3 7 mins until flakes with a fork. Break fish with a fork into 1/2 inch chunks.
