Ingredients
8 ears shucked corn
1 cup mayo
1 cup Parmesan cheese, grated
1/2 cup Chile powder
Limes cut into wedges
Preparation
Grill corn over coals, 2-3 min per side or total of about 15min. Place mayo, Parmesan cheese, Chile powder and lime wedges in small bowls. Have each person slather mayo on corn, sprinkle with Chile powder, grated cheese, then squeeze lime juice over each ear and eat right off the cobb. A bit messy but with enough napkins on hand, it’s a winner.
