Ingredients

1 box couscous,

1 tbsp olive oil

1 small onion, diced small

1/2 green pepper, diced small

2 tsp cocoa powder

1 tsp cinnamon

1/2 tsp chili powder

pinch sugar

1/4 cup pistachios

2-3 green onions, chopped (for garnish)

Preparation

Prepare couscous as directed on box, substituting vegetable broth for the water.

While couscous is cooking, heat olive oil in a small skillet over medium-high heat. Saute onions and pepper together until soft and just turning brown.

Place cooked couscous in a bowl, add sauted vegetables, cocoa powder, cinnamon and sugar. Toss gently until mixed. Top with pistachios and green onions.
