Ingredients
1 regular sized jar of salsa
1 can of black beans
1 cup of frozen corn
1 lb. ground beef
1 large pack of Mexican cheese
2 cups of cottage cheese (mixed with 1 tsp nutmeg
and 1 egg)
garlic salt
ground red pepper and soft taco shells.
Preparation
1.) Pre-heat the oven to 400 degrees. 2.) Saute the ground beef in a pan, and season with garlic salt and red pepper. 3.) Once meat is slightly browned, pour salsa over the meat and stir together. 4.) Saute meat in pan for about 5min more. Then set aside. 5.) Grease a 13x9 glass pan with some butter. 6.) layer the pan up with beef, then taco shells (enough to cover up the meat for the next layer). Then layer two cups of the cottage cheese over the taco shells, and repeat with another layer of taco shells. 5.) Next drain the black beans, and mix with the corn and some garlic salt. This will be used for the next layer over the shells. 6.) Then layer with meat again, and finish with the whole pack of Mexican cheese. 7.) Bake in the oven for about 30min. It should be bubbling and golden brown. 8.) Serve with sour cream, and enjoy :)
