Ingredients

1 White Onion

2 T Olive Oil

1 Lb Ground Beef (or shredded chicken)

7 Oz Can Diced Green Chilies

2 - 14 Oz cans Stewed Tomatoes

1 - 29 Oz can Tomato Sauce (or 2 small cans)

1 - 2 oz pkg Taco Seasoning

1 - 11 oz can Corn

1 Can Black beans, drained

12 Flour tortillas

Cheddar Cheese

Sour Cream

Preparation

Cook 1 diced onion in 2 T olive oil. Crumble 1 lb ground meat & cook till brown. Pour off fat. (or can use 1 lb meatless & doesn’t need browning). Add: 7 oz can diced green chilies 2 - 14 oz cans stewed tomatoes (can be Mexican) 1 - 29 oz can tomato sauce 1 - 2 oz pkg tqaco seasoning Cook slowly, 20 - 30 min. Add 11 oz can corn and 1 can drained black beans

Layer in a 9 x 14 pan:

  1. Spread bottom with little sauce
  2. Flour tortilla (total about 12)
  3. 1/3 the sauce
  4. 1/3 the shredded cheese (cheddar or Mexican)
  5. Tortillas
  6. Sauce
  7. Cheese
  8. In th middle, spread a layer of sour cream
  9. Continue layering ending with sauce, then cheese.

Bake about 45 min in preheated oven at 350 degrees. Let sit 10 to 15 min. to firm up before cutting & serving.

Serves 8. (Leftovers can be frozen)
