Ingredients

2 cups all-purpose flour

1/2 tsp almond extract

3/4 cup chopped pecans

3/4 cup powdered sugar

1/2 tsp. salt

1 cup unsalted butter

2 tsp. vanilla extract

Preparation

Heat oven to 350° Spread the pecans on a cookie sheet and toast in the oven until lightly browned, about 6-8 minutes. Cool Process pecans in a blender or food processor or finely chop with a knife. (not too fine) Beat the butter, salt, vanilla, almond extract and 1/2 cup of the powdered sugar until fluffy. (about 5 minutes) Add the pecans (by hand) Add the flour until incorporated (by hand) Roll the dough into balls the size of large marbles Place on a greased cookie sheet (or one lined with parchment) and bake for 15 minutes or until just starting to brown Remove from the cookie sheet to cool thoroughly, then roll in the remaining powdered sugar (twice)
