Ingredients
3-4 small zucchini
1/4 cup seasoned bread crumbs
1 can mexican seasoned diced tomatoes (chunky salsa can be used also)
1 cup (or more) grated chedder cheese
Preparation
Spray cooking oil into a 8x8 dish. Slice zucchini on diagonal in 1/2"slices, place in dish. Season with salt & pepper. Sprinkle evenly with bread crumbs. Only use enough to lighly cover the zucchini. Top with the tomatoes then the cheese. Cover with foil and bake at 350 for 20 min. Remove foil for last 5 min to crisp.
