Ingredients

1 small minced onion

2 cans pinto (or other white)

beans.

3 tbs salsa

2 tbs tomato puree

2 tbs taco seasoning

1 tsp salt

1 tsp sugar

1 tsp cayenne pepper

8-10 oz sour cream

3 tbs cream cheese

Shredded sharp cheddar cheese

Small green pepper, small tomato, small red onion, scallions

Preparation

1st layer - Drizzle small amount of oil in saucepan, add chopped onion & brown lightly. Add beans,salsa,puree,taco seas. salr,sugar, cayenne pepper. Mash until smooth. Spread on bottom of casserole dish & let cool completely. LAYER 2 Combine sour cream & cream cheese. Mix until smooth, spread over bean mixture. LAYER 3 Sprinkle layer of shredded cheddar cheese LAYER 4 Chop into small pieces -green pepper, tomato, red onion,scallions. Cover the cheese layer with the veggies. Cover casserole & chill.
