Ingredients

2 pounds ripe fresh plum tomatoes

1 small red onion

6 pitted green olives

1 large clove garlic

1/3 cup chopped fresh parsley

2 tablespoons finely shredded fresh basil or 3/4 teaspoon dried basil, crumbled

2 teaspoons drained capers

1/2 teaspoon paprika

1/4 teaspoon dried oregano, crumbled

1 tablespoon red wine vinegar

1/2 cup olive oil

juice from 1 fresh lemon

1 pound uncooked spaghetti

Preparation

  1. chop all ingredients to a small consistency combine all of the ingredients and let sit for at least 4 hours
  2. cook the pasta just before serving the meal
  3. drain the pasta and combine instantly
  4. enjoy
