Ingredients
1/2 cup butter
1-1/2 to 2 tbsp lemon juice
3 egg yolks
pinch of salt
cayenne pepper
Preparation
Whisk egg yolks, salt and cayenne pepper together until pale yellow. Drizzle in melted butter in thin stream while whisking. Alternate microwaving for 10-15 seconds with whisking until sauce achieves the desired thickness.(Note: It will thicken up even more in the next 30 seconds, so stop a little short) Adjust salt and cayenne.
