Ingredients
1 c. white sugar
1/2 c. roasted, salted peanuts
1 Tbsp. butter
1 tsp. vanilla extract
1 tsp. baking soda
Preparation
In 1 1/2 quart casserole, stir together sugar and syrup. Blend well. Microwave on HIGH 4 minutes. Stir in peanuts, Microwave on HIGH 3-5 minutes longer until peanuts are golden brown. Add butter and vanilla to syrup. Blend Well. Microwave on HIGH 3-5 minutes more. Peanuts will be lightly browned- syrup will be very hot. Add baking soda and gently stir untill light and foamy. Pour onto lightly greased cookie sheet. Let cool 1 hour. Break into small pieces. Store in airtight container.
