Ingredients
1 3/4 cup chocolate cookie crumbs
1/3 cup butter, melted
8 oz cream cheese - at room temp
1/4 cup confectioners sugar
3 tbsp fresh orange juice
5 tbsp grand marnier
1 can crushed pineapple in juice
4 tsp orange zest
4 tbsp grand marnier
1 round tbsp corn starch
Preparation
combine cookie crumbs and butter and press onto bottom and 1/2" up sides of a 9" springform pan bottom. refrigerate beat cream cheese, confectioners sugar, 5 tbsp grand marnier and orange juice hard until smooth and completely blended. smooth the cream cheese mixture onto the crust and refrigerate. pour pineapple, zest, 4 tbsp grand marnier and cornstarch into a sauce pan and heat over medium low heat, stirring until thickened. Cool completely and cover the creram cheese filling with pineapple. garnish with this orange slices.
