Ingredients

1 lb sausage (breakfast, Italian, Chorizo, whatever)

9 eggs

3 C. milk

2 C. shredded cheddar (or other) cheese

1.5 t. dry mustard

1.5 t. salt

dash of pepper

about a half a loaf of italian or french bread torn or cut into bite-sized cubes, crust optional (I prefer to remove)

Optional veggies (peppers, mushrooms, chives, spinach, etc.)

Preparation

  1. Brown sausage 3-5 minutes, crumbling as you go. Allow to cool.
  2. In a large bowl beat eggs and milk. Add mustard, salt, pepper, and bread cubes. Mix well.
  3. Fold in cheese and sausage. (You could also add other veggies, mushrooms, peppers, chives or spinach.)
  4. Grease a 9 x 13 baking dish and pour in mixture. Cover and let stand in refrigerator overnight.
  5. Uncover and bake at 350 for 60 minutes.
