Ingredients
Garlic-as much as you want and any size
Green onions—the same
¾ lb. raw shrimp
¾ lb. Scallops
1 king crab leg
2 tbs. olive oil
2 to 3 tbs. butter
¾ to 1 cup half & half or cream
Fish broth (see below)
1 to 2 cups finely graded Grassi Grana Padano cheese (found in most super markets)
1 to 2 cups finely graded Sharp Provolone cheese
Pasta (I use De Cecco small sized noodles found at Sprouts but any will do)
Preparation
Heat water for pasta. Peel and divine shrimp. Crack crab and remove meat. Cut crabmeat into 1-inch pieces. Put shells of shrimp and crab into a small saucepan with about 1 and ½ cups water. Bring this to a boil and reduce heat to medium low also put ½ Knorr fish bouillon cube in with the shells. Cook for about 15 min. Strain the shells from the broth.
Sauté garlic and green onions in oil. Add scallops and shrimp. Cook at medium heat until just pink (no more than 2 min.). Remove from heat.
Cook pasta until almost done. Drain pasta and leave it in the pot. Add butter and toss with pasta. Over medium heat add cream and toss. Add fish broth and toss until it doesn’t seem dry. Put in the cheese half at a time and keep stirring until the sauce has turned creamy. Add more broth if necessary. Add all the seafood and stir it in. To me this is one of life’s little pleasures and I hope you enjoy it as much as I do!!!
