Ingredients
1 cup diced tomatoes
1 cup shredded green cabbage
1 cup shredded carrots
1 cup diced green peppers
1/2 lemon, juiced
1/2 cup diced red onions
1 cup frozen corn, defrosted
1 cup frozen green peas, defrosted
1 teaspoon cumin
1 teaspoon Mrs. Dash
1 teaspoon garlic powder
1 tablespoon Dr. Fuhrman’s Riesling Raisin Vinegar or red wine vinegar
1 cup cooked or canned kidney beans, low or no salt
1 cup cooked or canned chickpeas (garbanzo beans), low or no salt
1 cup cooked or canned black beans, low or no salt
25 ounces romaine lettuce, shredded
Preparation
Steam the tomatoes, cabbage, carrots, and green peppers for 10 minutes over low heat. Place in bowl and stir in lemon juice, red onions, corn, peas, spices, vinegar, and beans. Serve cold on top of shredded lettuce.
