Ingredients
CRUST:
2 cups all-purpose flour
1 teaspoon baking powder
8 tablespoons sugar
pinch of salt
sift above together
Add:
2 beaten eggs
1 stick butter melted
FILLING:
2 8-oz. cream cheese, softened
16 tablespoons sugar
4 beaten eggs
2 tablespoons flour
1 quart whole milk
2 teaspoons vanilla
Juice of one lemon.
Preparation
Pat the crust into a buttered 9x12" baking pan. (I have used a large springform as well, wrapping the outside in several layers of foil) For filling prep: Cream the cheese with the sugar, eggs & flour. Slowly mix in milk, then add the vanilla and lemon juice. Bake at 300 degrees for about 90 minutes–the filling will be a bit jiggly, but just a bit. Cool, sprinkle top w/cinnamon if desired. Serve chilled-wonderful with strawberries or any fresh fruit of your choice.
