Ingredients
1 Lb. Extra-lean ground beef
1 32 oz can Crushed tomatoes
OR 16 oz of plain tomato sauce
Mushrooms, sliced
8 oz. Pasta or egg noodles, cooked al-dente
1/2 cup white wine
6 green onions, sliced
1 cup Light sour cream
3 oz fat-free cream cheese
2/3 cup parmesan cheese, grated
2/3 cup baked potato chips, crushed
Preparation
Brown ground beef in a non-stick skillet over medium heat. Stir in mushrooms and onions. Salt and pepper to taste. Stir in wine and allow it to cook down. Stir in tomatoes and simmer until thickened and liquid is reduced, about 10 minutes. Combine sour cream and cream cheese in a separate bowl. Add some cooking liquid to the sour cream mixture and stir (helps avoid lumps). Pour the sour cream mixture into the skillet and turn off the heat. Mix thoughoughly.
Spoon some of the meat mixture into a casserole dish to coat bottom. Layer noodles and meat mixture, ending with meat mixture. Top with grated parmesan and crushed baked chips. Heat in a 350F degree oven until warm and bubbly and cheese begins to melt, about 15-20 minutes.
