Ingredients

2 cups mild cheddar cheese, grated

2 cups sharp cheddar cheese, grated

1 cup parmesan, grated

1/4 cup flour

2 teaspoons dry mustard

2 cups white wine

2 teaspoons dijon mustard

bread for dipping

Preparation

In a bowl combine the cheeses, flour and dry mustard.

In either a fondue pot or a medium pot, add the wine and bring to a slow simmer. Add large tablespoons of the cheese mix slowly, allowing each addition to melt before the next is added.

Once all the cheese mix has been added & melted, stir in the dijon mustard and season with pepper to taste.

Stir and keep over heat until the mixture is smooth and bubbling.

You can make this recipe a day ahead and then just gently reheat it right before serving.
