Ingredients

1-1/3 cup dried currants

1-1/3 cups golden raisins

1-1/3 cup dark raisins

1 cup dark, soft brown sugar

2 tart apples, peeled and finely chopped

2/3 cup cup candied mixed peel

1 cup shredded suet

1/2 cup chopped walnuts or pecans

1/2 cup dark rum

finely grated zest of one orange

finely grated zest of one lemon

2 tablespoons lemon juice

pinch each cinnamon, cloves, ginger and nutmeg

Preparation

Mix all the ingredients together in large bowl. Spoon into clean, dry screw-top jars, seal and store in clean, dry place for at least 2 weeks until required
