Ingredients

3 Tbsp Olive Oil

1.5 c of onions, sliced

1c carrots, diced

1c celery, diced

1 tbs garlic, minced

1/2c potatoes, peeled, cubed

1c green beans, trimmed/halved

1/2c dry cannellini or white navy beans, rinsed

1/2c zucchini, diced

1/2c shredded cabbage

1 14.5oz can of whole tomatoes, coarsely chopped

10c chicken stock or water

1 Tbsp fresh basil, minced

1 tsp, fresh oregano, minced

t tsp fresh thyme leaves

1 tsp, fresh italian parsley, minced

salt & pepper

Preparation

Heat olive oil in a large soup pot. Saute onions 10 mins over medium heat.

Add garlic, carrots, celery, potatoes, green beans, zucchini, cabbage, and saute for 3-4 minutes.

Add tomatoes, chicken stock, beans and herbs.

Simmer 1.5 hours until beans are tender. Salt and Pepper to taste.

Add cooked italian sausage for a heartier version.
