Ingredients
12 large cupcake papers
1 1/4 cup chocolate cookie crumbs
1/3 cup butter, melted
Melt butter and stir into crumbs, press evenly into 12 cupcake papers.
8 ounce pkg cream cheese, softened
1 cup plain skim yogurt
1/2 cup sugar
Beat cheese, sugar and yogurt until smooth.
1/4 cup strong coffee
1 1/2 tsp cornstarch
2 eggs, room temperature
Add remaining ingredients. Pour into cupcake papers. Bake at 325 for 20-30 minutes. Remove to cool.
Preparation
For effect, sprinkle with instant coffee or cookie crumbs.
