4 large eggs

2 Tbs mascarpone cheese

¼ tsp salt

Pinch of pepper

4 slices of bacon, cooked & crumbled

¼ cup shredded cheese (fontina, parmesan, mozzarella)

1 Tbs parsley, chopped

Preparation

Preheat oven to 375°. Lightly grease 6 muffin cups with non-stick spray or olive oil; set aside. In a medium bowl, add eggs, mascarpone, salt & pepper. Whisk until smooth and add cheese, bacon and parsley. Add mixture to the 6 prepared cups, filling almost to the top. Bake 20-25 minutes until tops are puffed and golden brown.

I adapted this from www.wishfulchef.com and subbed the bacon for prosciutto. I also use sour cream if I don’t have any mascarpone.
