Ingredients
2 pounds medium shrimp
peeled and deveined
2 jars sliced sundried tomatos
2 medium onions cut into wedges
2 tablespoons extra virgin
olive oil
2/3 stick of unsalted butter
1/3 cup old bay seasoning (or more to taste)
Preparation
On small wooden skewers (pre-soaked in cold water for 30 min.) thread one onion wedge and one piece sundried tomato toward one end of the skewer. Thread shrimp at the other end tail first and push toward the top looping the meaty end of the shrimp around the tomato and onion and securing it to the skewer. Melt butter, olive oil and old bay, mix and brush skewers generously. Grill or broil, turning once and basting again, until shrimp turn pink, about 4 minutes per side.
