Ingredients
1 lb. extra lean ground turkey
1 egg
1/4 c carrots
1/4 c broccoli or spinach (I used spinach)
1/4 c mushrooms
1/4 c tomatoes
1/4 c onions
3 garlic cloves
1 t salt
1 t pepper
1 t cayenne pepper
2 t herbes d’Provence
2 T flaxseed oil
low-sugar ketchup
Preparation
Spray muffin pan with Pam Heat oven to 400 degrees Put turkey and egg in a bowl Puree; carrots, broc (or spinach), mushrooms, tomatoes and onions and garlic in food processor. Add puree to turkey Blend spices with oil and add to turkey Mix with your hands - it will be super gooey! Scoop into muffin pan Squirt each with ketchup
Cover and chill for at least an hour - up to 6 hours. Put uncovered pan into hated oven Decrease temp to 375 Bake for 40-50 min, until sides are getting dark
Serving size is 3 mini meatloaves.
