Ingredients

Vanilla Wafers (*cheap brands of vanilla wafer are sometime smaller and good for making the really small cheesecakes)

¾ c. sugar

3-8 oz. softened cream cheese

3 eggs

¾ t. vanilla

1 T. lemon juice

Preparation

Cream all ingredients except eggs together on medium. Add eggs one at a time, beating well. Pour into cups filling almost full. Bake at 325 degrees for 10-15 minutes. Cool completely while still in pans. Chill, then top with pie filling. I used a cherry pie filling.

*To make vanilla wafers fit into the mini muffin tins, I sprinkled them with water and microwave about 9 at a time for 20 seconds. Then I trimmed them with the center of a doughnut cutter and put them in the paper liners. This is a little messy!
