Ingredients

1/4 lb bacon, ~6 slices, cut into 1 in. pieces

1 lb ground sweet/breakfast sausage

2 celery sticks, sliced

2 med. sized carrots, sliced

2 small potatoes, cubed

1 bag whole leaf spinach, rinsed and destemmed

8 c. low sodium beef broth

1 12 oz. can diced tomatoes

1/4 tsp cayenne pepper

1 tsp dried parsley

1 tsp dried oregano

1/2 c. ditalini

Preparation

1.) In a med. stock pot, cook bacon over med. heat until translucent, then drain fat. In the same pan, cook sausage over med. heat until brown, then drain fat.

2.) Add all of the ingredients EXCEPT the ditalini to the pot and bring to a simmer.

3.) After 1.75 h, remove from heat and add the ditalini while still hot.
