Ingredients

3 c. Cooked Quinoa

1 tbsp Extra Virgin Olive Oil

1 Lemon

12 leaves fresh Basil, thinly sliced

6 leaves fresh Mint, thinly sliced

1/4 c. Goat Cheese, crumbled

10-15 Cherry Tomatoes, halved

Salt and Pepper to taste

Preparation

Cook quinoa according to package instructions and let cool about half way to room temperature. Add olive oil and juice from half the lemon. Toss with herbs, cheese and tomatoes. Salt and pepper to taste. Serve with wedges of the remaining lemon. Delicious warm or chilled. If you are chilling this dish, I recommend chilling the quinoa before tossing with the other ingredients.
