Ingredients

cucumber, halved lengthwise, sliced

yellow bell pepper, cut into thin strips

red bell pepper, cut into thin strips

cup cubed cantaloupe

1/4

cup thin red onion slivers

1

cup sliced fresh strawberries

1/2

cup oil

1/4

cup finely chopped fresh mint

tablespoons sugar

tablespoons white wine vinegar

tablespoons water

Preparation

In medium nonmetal bowl, combine all salad ingredients except strawberries; toss to mix.

In small bowl, combine all dressing ingredients; beat with wire whisk until well blended. Pour over salad; toss to coat. Cover; refrigerate at least 1 hour or overnight to marinate.

Just before serving, fold in strawberries.
