Ingredients
1/4 cup icy cold water
1/4 cup apple cider vinegar
2 cucumbers, strip peeled, sliced or chunked
1/2 tablespoon fresh mint, chopped fine
3 cloves garlic, peeled, minced or crushed
1 tablespoon olive oil
1/2 teaspoon salt
Preparation
Mix the water, vinegar, mint, garlic, oil and salt together and set aside. Pour dressing over cucumbers. Put the cucumbers in a tightly sealed non-reactive container for at least 4 hours or overnight in the refrigerator. Turn them occasionally.
