Ingredients

Salad:

2 Cups Mixed Baby Greens

2 Roma Tomatoes

4 oz. Brie

1 oz. Walnuts

1 Roasted Red Pepper

Fresh Basil

Fresh Cracked Black Pepper

Vinaigrette:

1 Grapefruit

1/4 cup White Wine Vinegar

1/4 cup Extra Virgin Olive Oil

Preparation

Vinaigrette: Cut grapefruit into quarters. In small bowl, mix white wine vinegar and olive oil. Squeeze two quarters of grapefruit juice directly into bowl. Mix well and chill.

Salad: Remove pulp from remaining grapefruit quarters. Slice roma tomatoes. Dice brie into bite size pieces. Slice roasted red pepper into small strips. Mix baby greens and fresh basil leaves with tomatoes, grapefruit pulp, brie, walnuts, red pepper and toss. Garnish with fresh cracked black pepper. Serve with Grapefruit Vinaigrette.
