Ingredients

2 Tbsp. grapeseed oil

1 large onion, diced

1/2 lb andouille sausage sliced 1/4" thick

1 lb. leafy greens

2 cups chicken broth

salt, pepper, smoked paprika to taste

Preparation

  1. in a 4 qt pot, cook onions in olive oil over medium heat about 3 min. or until soft
  2. add remaining ingridients
  3. simmer over low heat about 30 minutes or until greens are tender
  4. season to taste and serve
