Ingredients
12 oz cooked pasta - penne, ziti, or fusilli
1 jar prepared tomato sauce
1 cup ricotta cheese
1 cup shredded mozzerella cheese
1/2 cup grated parmasan or romano cheese
1 egg
1 lb frozen spinach, defrosted and drained
oregano, basil, salt and pepper to taste
Preparation
Preheat oven to 350
Mix together ricotta, mozzerella, parmasan, and egg, herbs, salt and pepper. Add spinach and cooked pasta, mixing until just incorporated.
In a square 9-10" baking pan, spoon a thin layer of prepared tomato sauce. Place cheese and pasta mixture on top. Cover with remainder of tomato sauce. Top with a sprinkling of grated parmasan and mozzerella.
Bake for 30-40 minutes, until heated through.
