Ingredients
1/3 cup sake or dry sherry
1/3 cup mirin
1/3 cup light yellow miso
3 tbl. light brown sugar
2 tbl. Japanese soy sauce
800 grams grenadier fillets
2 tbl. chopped scallions or chives
Preparation
Mix first 5 ingredients (sake to soy sauce) in a shallow baking dish. Add fish and turn to coat. Cover and refrigerate at least 2 hours and up to 6 hours. Preheat broiler. Remove fish from marinade and place on baking sheet. Broil about 15 cm. (6") from heat source until just cooked through, about 6 minutes. While fish is broiling, reduce marinade until syrupy. Transfer fish to a serving platter and pour concentrated marinade over fish. Sprinkle with chopped scallions and serve.
