Ingredients
1 lb. string beans, steamed
1/2 c. dried cranberries, plumped
1/2 c. toasted pine nuts
gorgonzola cheese, optional
Dressing
3 T. olive oil
3 T. balsamic vinegar
1 T. dijon mustard
1-2 cloves garlic, minced
salt and pepper to taste
Preparation
Steam beans and toss with pine nuts and cranberries. Add dressing and let sit for 1 hours. Crumble cheese on top. Serve room temp.
