Ingredients
2/3 cup shortening
2/3 cup flour
1 1/4 cup sugar
1 Tbl instant coffee
1 tsp salt
1/2 tsp cream of tartar
1/4 tsp baking soda
1/2 cup water
1 tsp vanilla
3 eggs
2 1-oz squares melted unsweetened baking chocolate
Preparation
Stir shortening to soften. Sift in flour, sugar, salt, instant coffee, cream of tartar and soda. Add water and vanilla and mix until flour muixture is dampened. Beat for two minutes. Add eggs and melted chocolate and beat for one minute longer. Pour batter into wax-paper lined 9x5x3 loaf pan. Bake at 325 degrees F about 65-70 minutes. Cool for ten minutes and then remove from pan and carefully remove waxed paper. When completely cool sift confectioner’s sugar on top. Great with whipped cream or vanilla ice cream.
