Ingredients
1 head Romaine lettuce chopped fine
3 roma (plum) tomatoes, diced
1 small English cucumber, diced
1 small red onion, diced
1/4 cup sliced Kalamata olives
2 ounces feta cheese, crumbled
1 cup chick peas cooked and chilled
1/4 cup olive oil
1 teaspoon red wine or red wine vinegar
1 teaspoon lemon juice
1 clove garlic, minced
1/2 teaspoon fresh oregano and thyme
salt and pepper to taste
Preparation
- Whisk together the oil, red wine, lemon juice, garlic, oregano, thyme, salt and pepper. Let sit for 1 hour, occasionally stirring to blend flavors
- In a salad bowl, combine the tomatoes, cucumber, onion chick peas, and olives.
- Pour dressing over salad, add feta cheese and toss before serving.
