Ingredients

• 1 head Romaine lettuce chopped fine

• 3 roma (plum) tomatoes, diced

• 1 small English cucumber, diced

• 1 small red onion, diced

• 1/4 cup sliced Kalamata olives

• 2 ounces feta cheese, crumbled

• 1 cup chick peas cooked and chilled

• 1/4 cup olive oil

• 1 teaspoon red wine or red wine vinegar

• 1 teaspoon lemon juice

• 1 clove garlic, minced

• 1/2 teaspoon fresh oregano and thyme

• salt and pepper to taste

Preparation

  1. Whisk together the oil, red wine, lemon juice, garlic, oregano, thyme, salt and pepper. Let sit for 1 hour, occasionally stirring to blend flavors
  2. In a salad bowl, combine the tomatoes, cucumber, onion chick peas, and olives.
  3. Pour dressing over salad, add feta cheese and toss before serving.
