Ingredients

3 large ripe bananas

3/4 cup sugar

1 egg, slightly beaten

1/3 cup melted butter

1 1/2 cup blueberries

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

3/4 cup all-purpose flour

3/4 cup whole wheat flour

1/4 cup wheat bran

Preparation

  1. Mash 2 bananas in a large mixing bowl.
  2. Add sugar and egg.
  3. Add butter and blueberries and last banana broken up into pieces.
  4. Combine dry ingredients and gently stir into banana mixture.
  5. Pour into 12 well-greased small muffin cups or 6 well-greased large muffin cups.
  6. Bake at 375 degrees for 20-25 minutes.
