Ingredients
3 large ripe bananas
3/4 cup sugar
1 egg, slightly beaten
1/3 cup melted butter
1 1/2 cup blueberries
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup all-purpose flour
3/4 cup whole wheat flour
1/4 cup wheat bran
Preparation
- Mash 2 bananas in a large mixing bowl.
- Add sugar and egg.
- Add butter and blueberries and last banana broken up into pieces.
- Combine dry ingredients and gently stir into banana mixture.
- Pour into 12 well-greased small muffin cups or 6 well-greased large muffin cups.
- Bake at 375 degrees for 20-25 minutes.
