Ingredients
2 cups coarsely shredded rotisserie chicken
¼ cup red onion, grated
¼ cup prepared zesty Italian dressing
¼ cup loosely packed cilantro, finely minced
Juice and zest of 1 lime
2 tablespoons orange juice
Sandwich rolls
1 clove garlic, peeled
4 butter lettuce leaves
Preparation
Make filling: Mix together the chicken, onion, dressing, cilantro, jalapeno, lime juice and zest, and orange juice in a small nonreactive bowl. Cover and refrigerate for 1 hour or up to overnight.
Toast rolls: Cut a small wedge shape lengthwise out of the top of each roll. Lace the rolls and roll tops cut side up on an ungreased baking sheet. Broil for 2 to 3 minutes or until golden brown. While still hot, rub the insides of the rolls with the garlic clove.
Fill rolls: Place a butter lettuce leaf inside a roll; top with one fourth of the chicken mixture. Place a top on the sandwich. Continue to assemble sandwiches with the remaining ingredients.
