Ingredients

6 corn tortillas

2 cups shredded cheese

3 eggs

1 cup mole sauce

sesame seeds

Preparation

Heat the tortillas until soft. Put them in a pan and put 2tbs of cheese in one quarter, then fold tortilla in a half. Put more cheese and fold it again, you’ll end with a cone shaped-two cheese layers quesadilla.

Scramble the eggs in a separate pan.

Serve the quesadillas slightly on the top of each other, forming a row. Pour the mole sauce over them, and sprinkle the sesame seeds.

Finish adding the scrambled eggs on top and you’re done!
