Ingredients
1 1/2 cooked chicken
1 large onion
4 cloves garlic
2 large carrots - diced
6 stalks celery - diced
1 14 oz can crushed tomatoes in Puree
1 teaspoon each, cumin, chili powder, salt, lemon pepper
1 cup frozen corn
5 cups chicken stock
Preparation
Saute onion, garlic, carrots and celery, add chicken stock, tomatoes and spices and cook for 30 minutes. Just before serving, add cooked chicken pieces, corn and heat through.
Garnish with cheese, tortilla strips, avocado and cilantro.
