Ingredients
1/2 cup unsalted butter
3/4 cup brown sugar
1 egg
1/2 cup unsifted stoneground wholewheat flour
1/2 cup unsifted unbleached white flour
1 tsp baking soda
3/4 tsp sea salt
1 1/4 cups mashed banana
1/4 cup plain yogurt
1 cup of chopped walnuts
Preparation
- Preheat oven to 350.
- Mix the butter and sugar until light and creamy. Beat in the egg.
- Sift together the whole wheat flour, white flour, and baking soda.
- Combine the bananas and yogurt.
- Add dry ingredients (including walnuts) banana mixture to the butter mixture, stirring to combine well.
- Spoon into an oiled 9" by 5" loaf pan.
- Bake 50 to 60 minutes, then cool for 10 minutes before transferring to a cooling rack.
