Ingredients
1 1/2lb zucchini, shredded
2 carrots, shredded
1 head broccoli florets
2 medium onions, chopped or shredded
1 c brown rice
2 c cheddar cheese, grated
1 tsp salt or to taste
1/2 tsp pepper
1 T dried basil
3 eggs, just blended
1/2 c mayo (I use lite mayo)
bread crumbs - plain or seasoned
1T butter or margarine
parmesan cheese to cover
Preparation
Shred zucchini, carrots, onion and add broccoli florets to vegetable steamer and steam for 20 minutes or until tender.
In the meantime, prepare rice according to the package directions.
In a 2 quart casserole mix together the last 6 ingredients.
Add steamed vegetables and cooked rice and mix with mayo and cheese mixture. Adjust seasoning. Sprinkle bread crumbs over top; dot with 1T butter and grate parmesan cheese over top.
Bake 350 for 1 hour.
