Ingredients

2tbsp butter

1cup cottage cheese

2cups milk

1tsp dry mustard

pinch cayenne

pinch freshly grated nutmeg

1/2tsp salt

1/4tsp ground pepper

1lb sharp or extra sharp cheddar

1/2lb elbow pasta

Preparation

heat over to 375 butter a 9" baking pan (blend and puree cottage cheese, milk, mustard, cayenne, nutmeg, salt and pepper) Reserve 1/4cup grated cheddar for topping In a large bowl, combine remaining grated cheddar, milk mixture and uncooked pasta pour into pan, cover tightly with foil and bake 30minutes uncover and stir gently, sprinkle with reserve cheese, bake uncovered 30 minutes until browned let cool 15minutes
